They loved the original with eggs and still love it this way with the flax and lecithing egg replacement: Vegan Kanish Bread Modified from " The Complete American Jewish Cookbook " , by Anne London an Bertha Kahn Bishov 6 Tbs finely ground flax seeds 2 Tbs soy lecithin 1 cup water 2 cups chopped nuts (walnuts are good) 1 1/ 2 cups Sucanat (natural sugar) or 2 cups white sugar juice of 1/ 2 lemon 1 Tbs vegetable oil 1/ 2 tsp salt 2 cups matzo meal 1 tsp potato starch soy or almond milk Preheat oven to 350. Grease a square cake pan. Whip up ground flax seeds, lecithin, and water until frothy. Mix in rest of ingredients until thoroughly combined. Press into cake pan and brush top with soy or almond milk. I don't understand. There are NO LEGUME ingredients in this cake. Flax seeds are SEEDS, not legumes.
