thickenning a cream sauce

The main dish I want to make for the seder includes a cream sauce. Any thoughts

on thickening this without flour? I'm thinking about using potato starch.

Yes, potato starch works well, use a bit less than the amount of flour you would

normally use.

You can use potato starch.  Disolve it in cold water first, and add a teeny bit

at a time.  I once made a chocolate pudding that turned into a rubber ball.
