(My kinda food; seems like I'm always saying to friends who cook, " No, try this the simple way before you doctor it up. " ) Mustard-haters, don't let the mustard seeds steer you off this; when fried, they pop and take on a mellow, nutty and completely un-mustardlike flavor. -Begin Recipe Export- QBook version 1.00.14 Title: RAIN'S SUMMER-COLORED PASTA Keywords: pasta, squash, carrots, quick 2 1/2 small tender yellow squash, unpeeled, sliced 1 1/2 medium-large carrots, sliced fairly thin 1/2 a medium-large onion about 1 c. fresh kale, stems removed, torn up 6 oz. whole-grain spaghetti, any kind, broken up Olive oil, any flavorful kind 1 rounded tsp. mustard seed 1 rounded to heaping Tbsp. chopped fresh marjoram (don't substitute oregano!!) Salt to taste Place spaghetti and marjoram in just enough boiling, salted water to cook the pasta; you don't need quarts and quarts, and here they'd be a disadvantage to the flavor. Meanwhile, heat olive oil in a large nonstick skillet. Add carrots and saute till they are becoming tender and starting to color slightly. Add mustard seeds and then immediately the squash, kale and onion. (Popping mustard seeds tend to try to leap all over the kitchen, so it helps to have something to hold them down. ) Let cook without stirring for perhaps a minute, allowing the seeds to pop. Then cook, stirring often, till veggies are tender and squash and onion are beginning to brown. Pasta should be /al dente /by this time. Drain it, reserving a little liquid. Add pasta and perhaps 1/4 to 1/3 c. liquid (sorry, I don't measure much) to skillet and stir. Let cook over high heat for another minute, or till liquid is gone, then turn off heat and let pan sit for another minute. (These directions are for a gas stove; if using electric, watch the pan carefully to avoid scorching.) Salt to taste, stir well and serve immediately. Needs no trimmings or side dishes.
