Chickpea and mushroom flan 6 oz shortcut pastry (I buy already made flan cases) For the filling: 1 oz butter 1 onion, peeled and sliced 1 large clove garlic, crushed 4 oz button mushrooms, wiped or sliced (can use any) 4 oz chickpeas, soaked, cooked and drained (or canned) 1 tbsp chopped parsley Sea salt Freshly ground black pepper 1 egg 5 oz top of the milk 3 oz grated cheese Preheat the oven to 425F/220C/gas mark 7 Roll out the pastry and line an 8 inch flan dish, prick the base and bake in the oven for 15 minutes, Make the filling by melting the butter in a saucepan and frying the onions and garlic for about 10 minutes, until tender but not browned; then add the mushrooms and cook for a further 3-4 minutes. Stir in the cooked chickpeas and the chopped parsley and season with sea salt and freshly ground black pepper. Put the mixture straight into the hot flan case. Beat together the egg and top of the milk, season with sea salt and freshly ground black pepper, and pour into the flan case; scatter the grated cheese over the top.
