Guest guest Posted October 6, 2000 Report Share Posted October 6, 2000 Pancakes: -4oz Self-raising flour -1/4oz soya flour -pinch of salt -equivalent of 1 egg (egg replacer) -soya milk (for American Style add 1oz melted v margarine and 1oz of sugar) All you need to do is mix sufficient soya milk with the flour and salt to create a thick pouring mixture then add the 'egg'. Heat some vegetable oil in a pan and cook! Cheesecake: My mum has only made this once so far but it was REALLY good! Base: -6oz vegan digestives -3oz vegan margarine -1oz dark muscavado sugar Melt the margarine & sugar and mix with crushed biscuits. Topping: -250g Tofu -100g Soya yoghurt -grated rind of lemon -juice of 1/2 lemon -lemon vegan jelly Put the tofu, yoghurt, lemon juice and rind into a blender and blend until smooth. Put a small amount of boiling water on jelly crystals and stir until disolved. Add small amount of cold water and add jelly crystals to blender. Blend in until mixed. Spread topping over base and cool to set. You can add a fruit topping to this too, but I found it was good on its own. Happy eating! Hayley P.S.
