Guest guest
Seitan is a meat substitute made of pure gluten (I think). It's fantastic. Much like other meat substitute's it doesn't really have it's own flavour but you marinade it into whatever you want. Has a consistency/texture kind of a mix between braised meat (if quite airy) or more like steak if properly made (something I haven't managed yet). Check out www.teleport.com/~noelvn/vegan/gluten_seitan.html and it tells you about it. For some reason it's not really that big in the UK but it's everywhere in the states and they do really amazing things with it. The most amazing thing I ate in NY was a steak and parmesan sandwich (completely vegan) not that you'd know the difference! Also, tempeh is amazing if you don't already know about it. Pretty easy to make as well. Expensive in the shop but if you make it yourself it's dirt cheap. Also something you marinade to give it a taste (although some people like it just as it is). Check it out! Guest guest
Nicky, how does one make tempeh? I've only ever seen the expensive tempeh kits that give you a starter culture. Please explain. Guest guest
I bought a starter kit (which was just basically the starter culture) for £15 from www.micropix.demon.co.uk/tempeh. This starter culture makes about fifteen 1 litre cartons of tempeh (not bad I'm sure you'll agree for £15). From what I've seen, tempeh in the shops is about £2.50 for 250g so pretty good. Lasts for ages as well. I've only made it once but on the first time it came out fine. It's relatively easy but you need to keep it at a constant temperature (somewhere between 31 and 34×C) for 24 hours or more depending how 'done' you prefer it. I did this by putting the tempeh 'carton' (I think the woman on the website calls it a Tetrabrik) in a cupboard with a lightbulb. I'd already checked what temperature it made it. I then just left it there. Check out the website. The woman is very helpful. I've already emailed her several times with questions and she's been quite happy to get back to me and I don't really think £15 for the starter culture is that much considering how much it makes and how much money you save.
