Processing of tofu and al contamination bothers me some though. But so does drinking/eating anything in aseptic containers as most of them have Al. lining. Tofu is made from ground soybeans and water which do not contain gluten. Some of the coagulants could contains some traces, I don't know. I find that many of the light varieties do not but some also contain hidden gluten in the propietary brewing process. It's best to try an alternate product like Liquid Aminos (also soy based) or to contact the manufacturer to verify if the product is gluten free. Tofu itself (soy bean curd) does not contain gluten but be careful with some of the new flavoured varieties until you have checked with manufacturers. BTW, tamari is more like the real stuff they make on farms in oriental villages. Our store keeps it refrigerator, we take in our own bottles to get them filled.
