Dear Friends,

 

It's party time! Why is the raw foods movement

sweeping the nation? Why are people lined up

at raw foods restaurants in California?

 

Is it more than good health?

Darned right!

It's great taste!!!

 

I sampled my first durian last summer in Toronto.

Imagine a fruit the size of a small watermelon,

covered with spikes. Inside, there is a custard

that takes some getting used to. It's a combined

essence of lemon, honey, and shallots. Does it

work? Last month, I tasted a frozen durian sorbet

with flecks of mint, and all I can say is that

those enjoying a raw food diet can teach the

rest of us the pleasures of hundreds, yes hundreds,

of different fruits and vegetables available to

please the most demanding of gourmets.

 

I've already been influenced, yet there is so much I

am going to learn from June 18-24. Imagine

spending one week in the company of the world's

greatest raw food chefs. Emeril won't be there,

and neither will Paul Prudome or the Galloping

Gourmet. We'll have the great chefs and artisans of the

raw foods movement, people with names like

Cherie Soria & Kofi Kwatamani, Raw Ma Catherine

Ralston & Rhio & Shanti, Solomae & Tre Arrow.

 

SOMETHING FOR THE SWEET TOOTH

 

I'll finally learn how to make those pie crusts

from heaven. The ones with raw hazlenut butter

as a binder, containing chopped dates and sunflower

seeds. I'll fill the pies with a coconut cream that's

been sweetened with vanilla and maple syrup, and

raspberries, papaya, and pomegranate.

 

WORKS OF ART

 

I'll learn the art of combining raw vegetables

like burdock and minced mint leaves with Umeboshi

paste and aged miso to create the same spring

rolls that I've sampled in the finest tea ceremonies

of New York's best Japanese restaurants.

 

I will be attending and lecturing at three one-week

festivals this summer. The first is less than four weeks

from today!

 

THE RAW FOOD MOVEMENT IS MORE THAN
