Guest guest Posted November 26, 2001 Report Share Posted November 26, 2001 IN THIS ISSUE: Awesome Spicy Black Bean Chili Frijoles de Splendor (a chilli-like black bean recipe) Masoor Dal Pineapple Pie Dessert Pizza -- Recipe from Margot Awesome Spicy Black Bean Chili Ingredients: + 2 tsp olive or vegetable oil + 1 large onion, chopped + 1 large green bell pepper, chopped + 1-2 jalapeno peppers, seeded and chopped + 1 Tablespoon chili powder + 1 tsp cumin + 1 tsp oregano + 1/8 tsp cayenne pepper (optional) + (1) 14 oz. can diced tomatoes + (2) 16 oz. cans black beans, rinsed and drained (OR 1 can black beans & one can kidney beans) + 1 cup corn + 1/3 cup fresh cilantro, chopped (optional) Directions: Add chopped onion, bell pepper, jalapeno, garlic and oil to large skillet. Cook over medium heat until vegies are soft (about 5 mins). Add spices, tomatoes (undrained)and beans and simmer for 15 mins. Stir in corn, cook 2 mins. Add cilantro and serve. -You can add water for a 'soupier' consistency. -Use only one jalapeno and omit the cayenne if you don't like spicy. -This recipe is great for big groups, and the recipe can be stretched by serving the chili over elbow macaroni. Enjoy! Serves: 5-6 Preparation time: 30 mins -- Recipe from Erika Grace Nelson egnelson Frijoles de Splendor (a chilli-like black bean recipe) Ingredients: + 2-15 0z cans of black beans, or 1 can black beans and 1 your choice + 1-15oz can diced tomatoes + 1 large red pepper + 1 small dried hot chilli + 1 small onion + 1/4 tsp cumin + a few dashes each of salt, pepper, chilli powder and paprika + 2 tbsp vegetable oil + small clove(s) garlic + tortillas or cooked rice (optional) Directions: Chop the pepper and onion. In a large skilet, heat the oil and add the pepper and onion. Cook until tender. Add the tomatoes and spices and cook for about 5 min. Meanwhile, drain the beans slightly (until the liquid coming out of the can becomes colored). Then add the beans. Cook for about 15-20 minutes (if you can wait that long; the longer you wait the better it tastes...esp. very good as leftovers!) Then it is finished. Now it can be served over rice in a tortilla, just over rice, just in a tortilla, plain or anything else you can think of! *Note: this recipe is medium-hot. For a milder recipe, omit the hot chilli* Serves: about 5 Preparation time: about 40 min -- Recipe from my friend Meg from Pakistan -Sheila C. Masoor Dal Ingredients: + 1 cup red lentils (they actually look orange) + 1 teaspoon coriander powder + 1/2 teaspoon Indian chili powder (cayenne can be used in a pinch) + 1 teaspoon salt + 3 cups water (you can adjust this to desired thick/thinness of dal) + 4 tablespoons oil (or less) + 1 teaspoon prepared minced garlic Directions: Rinse the lentils and pick out any impurities. Add water, coriander powder, chili powder and salt. Cook over a medium low heat until beans are mushy but still retaining some distinctive texture. (You may want to adjust the water and/or cooking time to the consistency that you prefer.) When the lentils are nearly finished cooking, saute the garlic in the oil on a low heat until it's golden, with a tinge of brown. Add this to the dal. Stir and serve. Adjust seasonings as desired. As simple as this recipe is, it is truly delicious and satisfying. Coupled with steamed basmati rice it is a complete protein and very nutritious. You need only add some vegetables on the side for a beautifully balanced meal. Serves: 4 Preparation time: 20 min -- Recipe from Keegan (Keeganthefish) (http://www.keegansaquarium.f2s.com) Pineapple Pie Dessert Pizza Ingredients: + Crust: 1 cup flour (I used Whole Wheat), 1/3 cups + 1 tbsp vegan margarine, 2+ tbsp Cold Water, 1 tsp salt + Filling: 3 cups canned pineapple, 1 tbsp brown sugar, cornstarch + Crumbles: 3 whopping tbsp flour, 1 tbsp vegan margarine, 1 tbsp brown sugar or sugar in the raw Directions: Recipe crust: Combine flour and salt. Add vegan margarine, mix and crumble with hands. Add water and form into a ball(add additional water if needed). Chill. Recipe filling: Empty cans into pan and cook on low until warm. Add sugar and stir in. Add some cornstarch(enough to your perferred thickness). Chill. Recipe crumbles: Add all ingredients. Crumble and mix with hands. Chill. Recipe pie: Roll crust to fit a 9 pan.
