Haystacks

 

Ingredients:

 

+ beans, I use Pinto Beans

+ TVP or TTP, prepared

+ vegan cheese

+ tomatoes, chopped

+ lettuce, shredded

+ avocados, cubed

+ onions, diced

+ black Olives

+ tortilla chips

+ mushrooms

+ salsa

+ salad dressing

+ any other salad or taco ingredients of your choice

 

Directions:

 

This is an old family stand-by. Use as much or as little of

each ingredient as suits your taste buds. Make your beans which

ever way you usually do, same with the tvp. Put a layer of

chips on your plate, then beans, and then layer whatever

ingredients you want, in whatever way you want them. And then

eat.

 

Be careful, there's no way to make a SMALL haystack!

Lotsa Calories Milkshake

 

Ingredients:

 

+ 1/2 cup water

+ 1/4 cup orange juice

+ splash of soy milk

+ 2 Tbsp soy protein powder

+ 1 - 2 Tbsp Udo's oil (or flax oil)

+ 1 - 2 Tbsp organic blackstrap molasses

+ 1 - 2 tsp greens powder

+ 1 ripe banana (frozen is good too!) or frozen strawberries,

raspberries....

+ maple syrup to taste (optional, but more calories! ;-))

 

Directions:

 

Put everything into a blender except the molasses. Pour this

into the blender after you have started the machine...I find it

mixes in better this way.

 

If you are going to be using frozen bananas, wait until they

are very ripe, then peel and put into freezer bags for easy

access later on. Make sure you peel them first or else you will

freeze your fingers off trying to peel them once frozen!

 

I called this lotsa calories b/c I am forever trying to GAIN

weight. This is an inbetween meals snack. Before you say, oh I

wish I had her problem, let me tell you...you don't! I want to

be the picture of health so that when people look at me they

see a healthy vegan. If any of you know of high-calorie,

easy-to-make vegan meals, PLEASE send them my way. I am in the

member directory under vegangal.

Lentil/Barley Stew

 

Ingredients:

 

+ 1 bag of lentils, rinsed and picked over

+ 1 cup of pearled barley

+ 1 big can of chopped tomatoes

+ 2 onions chopped

+ 1 or 2 cloves of garlic, minced

+ 1 potato chopped

+ 1 parsnip chopped

+ half a bag of baby carrots

+ about 1/3 of a bottle (or more)of a yummy red wine

+ half a bag of baby spinach

+ some canned green beans (I used some left over fresh green

beans from thanksgiving.)

+ season to taste (I used pepper, Braggs, parsley, oregano,

and chilli powder.)

 

Directions:

 

Combine the first 3 ingredients and some water in a crock pot

on high. About an hour and 1/2 later, add the next 6

ingredients. Turn to low, simmer for another half hour or so.

Then add the last of the ingredients and simmer another half

hour or so. Serve over brown rice or potatoes.

 

This is better the next day...

 

Serves: 6-10

Quick Veggie Pasta

 

Ingredients:

 

+ 1 cup small bow tie pasta

+ 1 bag mixed frozen vegetables

+ 1 teaspoon minced garlic

+ 1 diced small onion

+ 1- 14oz can diced Italian tomatoes

+ 1 tblsp. olive oil

+ season to taste

 

Directions:

 

Bring a four quart pot to a boil and add the frozen veggies,

when almost done add the bow ties and cook till tender. Dice

and mince the onions and saute in a pan in about 1 tbls. of

olive oil. When tender add the diced tomatoes and cook down

until most of the moisture is gone from the tomatoes. Drain

pasta and veggies and mix all together. Serve with a crusty

bread and light salad.

 

Serves: 4

 

Preparation time: 30 min.

Spicy Shepherd's Pie

 

Ingredients:

 

+ 5 lbs Potatoes

+ 1 cup soy milk

+ 1 package (12 oz) veggie crumbles (veg. ground beef

substitute)

+ 2 14 oz. cans cream corn

+ 1 14 oz. can black beans

+ 3 cups frozen green beans

+ 1 6oz. jar hot cherry pepper rings

+ oregano, thyme, paprika

 

Directions:

 

Peel and cut potatoes and boil for 30 minutes or until

sufficiently soft for mashing. Drain and mash potatoes with

soy milk. Preheat oven to 350 degrees. In 9 x 12 baking dish,

spread out layer of veg. ground beef substitute. Drain and

rinse black beans and spread over first layer. Next spread

layer of frozen green beans. Next, spread cream corn over mix.

Add cherry pepper rings -not the juice, only the peppers -

sparsely or liberally depending on the desired heat (I like the

liberal version!). Cover with layer of mashed potatoes evenly.

Toss a dash of oregano, thyme, and paprika across the top.

 

Bake for 35 minutes and serve.

 

Makes a bunch of servings, but you won't get tired of it!!

 

Serves: 12

 

Preparation time: 1 hour
