However, I wouldn't serve anything non-vegan just to cater to their wants. I NEED recipes! I'm not the best cook in the world (I've tried contacting caterers here but none do vegan food) so do you any of you have any yummy, easy recipes you could share with me??? I want them to leave my party thinking, " Wow, vegan food tastes BETTER than (or just as good as) meat! " Thanks everyone! " I've had several parties where all my guests are non vegan and I find the following easy recipes go down really well. Get large baguettes, white and brown, cut into sandwich sizes and fill with 1.hummous and tomato. 2.avocado mashed up with lemon juice and garlic. mix in spinach leaves and canned butter beans. 3.'Tartex' yeast pate and salad You could also cut carrot and peppers into slices and use in dips. Another good dip for tortilla chips or vegetable pakora/bahjis is mix tomato ketchup with lemon juice and dried mint. great! You could also roast sliced potatoes/parsnips in olive oil. Season with salt/pepper. Rice made with veg stock and add curry powder at the end. You could maybe also stuff tomatoes or peppers with this. Roughly chop 4OZ dates and put in food processor/liquidiser/blender with 2oz raisins till it forms a sticky paste. Sprinkle 1oz desiccated coconut onto peice of baking parchment and roll the date and raisin mix on top into a 6in square, turning it over so the other side is coated Cover with a peice of baking parchment. Place between the 2 layers of paper and cover with another plate. Put in fridge for 3-4 hrs to firm. Cut into squares or diamonds. Bowls of vegan sweets or dried fruit and nuts also seem to go fast too. Stick peices of fresh pineapple, strawberries melon on coctail sticks. I don't bother with meat substitutes anymore. I find people tend to be more impressed with what you can do with a vegetable. So hope this is help.
