well here are some recipes i have on my computer. i should point out i havent

tried

any of them yet, so dont blame me for any accidents! and also, not all were

taken

from vegan sites, so it might say " butter " or " milk " etc in the ingredients

list. you

should just substitute these with your favourite vegan alternatives.

vegetable kebabs

 

 

1 green pepper, seeded & cut into pieces

1 courgette, cut into chunks

1 small onion, peeled & quartered

2 tomatoes, quartered

4 mushrooms, halved or quartered

salt and pepper

25g butter

 

 

thread all veg onto couple of skewers

daub with butter

grill for 15 mins

serve with rice

Spicy Roasted Potatoes

 

2lbs red potatoes, cut in 1-inch pieces

2 tablespoons vegetable oil

2 cloves garlic, finely diced

3 tablespoons cumin seeds

2 dried chilis (optional)

2 tablespoons lime juice

2 teaspoons salt

1 teaspoon sugar

1/4 cup cilantro leaves

1/4 cup unsweetened coconut

 

1. preheat oven to 375 degrees. in a mixing bowl, toss potatoes with 1

tablespoon oil. transfer potatoes to a large baking sheet and bake 20

minutes, until slightly tender. transfer to a mixing bowl.

 

2. in a small skillet over medium heat, saute garlic in remaining oil for 1

to 2 minutes. stir in cumin seeds and chiles, if using. cook for 2

minutes. remove from heat and mix in lime juice, salt and sugar.

 

3. pour seasoning over potatoes, and toss well. return to baking sheet and

bake for 30 minutes, stirring occasionally, until golden. toss with

cilantro and coconut before serving.

Syrup and oatmeal cookies.

 

Makes 26

Preparation Time: 10 Minutes

Cooking Time: 15 Minutes

 

Ingredients:

 

125g (4½oz) butter

125g (5 tbsp) golden syrup or brown rice syrup

125g (4½oz) soft brown flour

175g (6oz) self raising flour, sifted

125g (4½oz) porridge oats

50g (2oz) raisins

5g (1 tsp) ground ginger

 

Instructions:

 

Preheat the oven to 180°C/350°F/Gas Mark 4.

Melt the butter with the syrup in a pan over a low heat.

Stir in the sugar, flour, porridge oats, raisins and ginger and

mix well.

Grease a baking sheet with butter.

Shape the mixture into small balls using a heaped teaspoon of mixture, place on

a

baking tray and flatten slightly (allow space for cookies to spread). Bake for

15

minutes or until lightly brown and

firm to touch.

Cool for 5 minutes, then remove from the tray.

Place the cookies onto a wire rack to cool and firm. When cool, store in an

airtight

container.

herbed veg combo

 

2 T Water

1 c Zucchini, thinly sliced

1-1/4 c Yellow squash, thinly sliced

1/2 c Green pepper, cut into 2-inch strips

1/4 c Celery, cut into 2-inch strips

1/4 c Onion, chopped

1/2 t Caraway seed

1/8 t Garlic powder

1 Tomato (medium), cut into 8 wedges

 

Heat water in large frying pan. Add squash, green pepper, celery, and onion.

Cover

and cook over moderate heat until vegetables are tender-crisp (about 4 minutes).

Sprinkle seasonings over vegetables. Top with tomato wedges. Cover and cook over

low

heat until tomato wedges are just heated (about 2 minutes). Makes 4 servings.

Cinnamon Potato Rolls

 

1/2 c sugar

3/4 c mashed Maine potatoes

1 1/2 c warm water

2 pkgs dry yeast

1/3 c margarine (low fat)

egg beaters (or 2 eggs)

1 t salt

6-7 c flour

1 c brown sugar

1 t cinnamon

2 T low fat margarine, melted

raisins (optional)

 

Combine sugar and potatoes. Add water and yeast, mix well. Add margarine, eggs,

and

salt. Gradually stir in flour, knead. Let rise. Divide dough roll into a 12x12 "

square. Brush with margarine - sprinkle cinnamon and brown sugar mixture. Roll

jelly

roll style. Cut and place in greased pan. Let raise again covered. Bake at 350

degrees for 20-25 minutes. Drizzle with confectioner sugar icing after baking.

Scrummy biscuits.

 

Makes 14

Cooking Time: 15 Minutes

Preparation Time: 10 Minutes

 

Ingredients:

 

115g (4oz) butter

55g (2oz) caster sugar

140g (5oz) self raising flour (sieved)

 

Instructions:

 

Preheat the oven to 180°C/350°F/Gas Mark 4.

Grease the baking sheets with butter.

Cream the butter and sugar until pale and fluffy. Gradually stir in

the sieved flour and, using your hands, gather the mixture into a

soft dough.

Roll into small balls and place well apart on the baking sheets.

Dip a fork into cold water and flatten each ball to leave a pattern.

Bake for 12-15 minutes until a pale golden colour. Cool for 5

minutes, then remove from the tray.

Place the biscuits on a wire rack to cool and firm.

Roasted Mushrooms and Mixed Vegetables with Pasta

 

1 lb mushrooms, mixed fresh, cut in large pieces (white, portabella, shiitake,

crimini, oyster)

1 sweet red bell pepper, cut in 1 inch chunks

1 onion, medium, cut in 8 wedges

1/2 t salt

1 zucchini, large, cut in 1 inch chunks

2 T olive oil

1 t garlic, minced

108 t black pepper, ground

 

Preheat oven to 450 F. In a 13x9x2 inch nonstick baking pan (or spray a

conventional

pan with vegetable cooking spray) place mushrooms, bell pepper, zucchini and

onion.

Toss with olive oil, garlic, salt and black pepper. Bake uncovered, until

mushrooms

and vegetables are tender, about 20 minutes. Serve as a side dish, or toss with

pasta

or rice if desired. Makes 4 servings.
