You see, when these people go out with vegans, suddenly they're not the centre of attention anymore - the vegan is. So they feel like they have to make a fuss to focus the attention back on themselves. As far as your Mum refusing to eat vegan cakes, why not cook her some cakey things that are naturally vegan. For instance, there's a recipe on my vegan website for traditional Australian Anzac biscuits which are very yummy and vegan - the recipe is here: http://www.veganforlife.org/recipes.htm#sweets Then if she queries it, give her the recipe! She'll see it's all " normal " ingredients, then next time you can try her on a cake with vegan substitutes. Another good way to encourage people to try vegan foods is to emphasize the " low fat " aspect. People then feel like it's food they can cope with, and most people (women especially) have positive feelings towards low fat foods.
