Not to blow my own trumpet or anything, muffins are about the only pudding I

can make, but I think this is a pretty good recipe - try this link (I meant

to put loads of recipes up on this but muffins was as far as I got :/ ) -

1 1/4 cups bran flakes cereal

1 1/4 cups all-purpose flour

1/3 cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon baking powder

1 1/4 cups apple juice

1/4 cup margarine, melted

1 teaspoon vanilla extract

1 apple - peeled, cored and chopped

 

 

Directions

1 Preheat oven to 375 degrees F (190 degrees C). Grease muffin tins.

2 In a mixing bowl, combine bran flakes, flour, brown sugar, cinnamon and

baking powder. Stir in apple juice, margarine, vanilla, and apple. Spoon the

mixture into the greased muffin tins.

3 Bake at 375 degrees F (190 degrees C) for 25 to 30 minutes

Margarine is full of trans fatty acids which is really bad for your ateries.

Cream of tartar is made out of grape skin extract, I seem to recall - it's

certainly vegan.

 

For muffins you can also use self-raising flour with no other raising

agent(though I don't know if you can get wholemeal self-raising), or just

ordinary baking powder.

 

I would recommend that you use a bit of white flour as well as wholemeal -

say half and half, cos otherwise I think they might be a bit heavy - the

chocolate version certainly works with up to 2/3 wholemeal, but I've never

tried the variations with anything other than white, which I think gives a

better texture.

Cream of Tartar is a natural, pure ingredient left behind after grape juice has

fermented to wine.

I've seen it in recipes but assumed it was not veggie. Thanks very much for
