Guest guest Posted September 13, 2002 Report Share Posted September 13, 2002 From happy_phantomess7 Ants Crawling Up Trees Ingredients: 2/3 c TVP 1/2 c hot water 2 tb soy sauce 1 to 2 Tbsp hot bean paste 1/2 ts salt (optional) 3 1/2 oz bean thread noodles 2 c veggie broth or water Directions: Pour the boiling water over the TVP and let it sit for 10 minutes. Saute the gingerroot in a very small anount of oil or other liquid. Add the soy sauce, bean paste, salt and TVP. Cook very very gently and stir frequently as it burns easily. Cook about 5 minutes and set aside. Cook the bean threads in the broth until the broth has been absorbed by the noodles. Add the noodles to the TVP mixture and stir until blended evenly...ie. all the " ants " are distributed throughout. In a separate bowl, combine wet ingredients. Make a well in the flour, and pour wet ingredients in. Mix, but don't stir too much. Pour onto hot skillet, flip once. Makes 6 medium pancakes. I have a lot of fun with this recipe. You can eliminate the nutmeg and make fruit pancakes. Mash up one banana and add at the end, or add apples, applesauce, cinnamon, and raisins, or even add blueberries. It all works, we eat different pancakes every day. This smoothie is delicious, and very healthy. The almond butter supplies vitamin E and monounsatured fat. Serves: 1 Preparation time: 5 minutes -- E-mail Print Add to: Recipe Box | Grocery List | Meal Planner From Danielle montyd33 Peanut Butter Cookies Ingredients: 1/2 cup vegan margarine 1/2 cup natural peanut butter 1/2 cup non-refined sugar 1/2 cup sucanat or brown sugar 2 tablespoons water 1 tsp egg replacer 2 cups flour 3/4 teaspoon baking soda 1/4 teaspoon salt Directions: Combine margarine, peanut butter, both sugars and water. Sift together the dry ingredients, then stir into first mixture. Mix completely. Roll into 1 " balls, and place about 3 " apart on greased cookie sheet, then flatten with a fork. Bake at 375 degrees for 8-10 minutes, until cookies are set. You can use one cup of sucanat instead of two different sugars, and the cookies still come out perfect. Enjoy! Serves: 2 dozen Preparation time: 30 minutes total -- E-mail Print Add to: Recipe Box | Grocery List | Meal Planner From Gabi guerong Plantain 'Taboule' Salad Ingredients: 1 large plantain, green 1 medium onion, finely chopped 2 or 3 tomatoes, (according to size) diced 400 g chopped parsley A few leaves of spearmint, chopped (optional) * 4 tbs lime or lemon juice 4 tbs olive oil salt and pepper to taste Directions: This recipe is a variation on tabouli - it substitutes the cracked wheat with green shredded plantain. Peel and cut plantain into three inch pieces, and boil to cook until it gets soft and changes color, for 20 or 25 minutes. Drain and let cool just enough until you can handle it without burning, and shred coarsely (shredded plantain will faintly resemble macaroni). While plantain cools, mix the lemon juice with the onion and leave for 10 minutes (this will " cook " the onion so it loses some of its metallic bite). Then add olive oil and salt and pepper to taste. When throughly cooled, mix with herbs and serve chilled. * Variation: you can subtitute the spearmint leaves with some fresh coriander leaves. Wolcott, NYC Tacos TVP Ingredients: 1 1/2 cups dry TVP 1/4 onion, finely chopped 1/4 red or green bell pepper, finely chopped 1 clove garlic, minced 1/2 tsp. cumin dash (or more) chipotle powder, if desired (I love the stuff, so I use a lot) -or- 1 chopped canned jalapeno 3/4 small can tomato sauce (use the rest for sauce on top, adding some chopped jalapeno) some fresh ground pepper chopped tomatoes, lettuce, cilantro, onions, or whatever you like to put on top. 6 Taco shells (this also makes great burrito filling) Directions: Soak TVP in water for 5 minutes. Saute onions, peppers, and garlic. Add TVP, tomato sauce, chipotle powder and/or jalapeno, cumin, ground pepper. Simmer on low heat 15-20 minutes, stir occasionally. Chop tomatoes, etc. for toppings, mix up some taco sauce with remaining tomato sauce and heat up your taco shells. 'Meat' is done when it's real thick (you don't want it oozing out of the taco shells). Serve with whatever you like best, I usually make a couple sides of vegetables to go with it. This also goes great with spinach or mixed veggie burritos. Serves: 2-3 Preparation time: 30 min. -- E-mail Print Add to: Recipe Box | Grocery List | Meal Planner From Sumico Tasty 'Meat Loaf' Ingredients: 1 teaspoon olive oil 1 small onion - chopped 2-3 cloves garlic, minced 1 teaspoon dried oregano 2 slices whole wheat bread 1 cup vegetable broth egg substitute for 2 large eggs 2 pounds Gimme Lean (regular or sausage flavor) 1 1/2 cups soy milk 3 tablespoons dijon mustard 1 teaspoon black pepper 1/4 - 1/2 teaspoon salt 3/4 cup ketchup or tomato puree Directions: Preheat oven to 350 degrees. Grease an 8X4-inch loaf pan. Heat oil in a skillet over medium heat and add onion. Cook about 3-5 minutes, or until golden. Reduce heat to Low and add garlic and oregano, and cook 3 minutes. Place in a Large mixing bowl and set aside to cool off. In the meantime soak the bread in the broth until moist. Then, Squeeze out the extra liquid and add bread to onion mixture. Add the Egg Substitute, Gimme Lean and remaining ingredients and mix by hand until everything is really mixed. (It will be quite saucy at this point but don't worry It will set!) Place the mixture in the loaf pan and bake for 1 hour and 15 minutes. --I only had the sausage flavored Gimme lean on hand and it turned out really Tasty!-- Serves: 6-8 Preparation time: 10 Minutes -- E-mail Print Add to: Recipe Box | Grocery List | Meal Planner From carrie supercarrot_away Vegan Mudslide Ingredients: 1/4 cup of water 2 tablespoons " Better Than Milk " powder (original or chocolate) a squirt or 2 of vegan chocolate milk mix (depending on how chocolatey you like it) dump some kahlua in it... approximately 1/4 cup - 1/3 cup a 16 oz glass full of ice Directions: If you have a " vitamixer " it makes this superior to any mudslide you can make in a conventional blender. Mix everything together, and blend on high til all is smooth and beautiful... drink (or eat with spoon) as soon as possible. mmmm-mmmm good!
