Recipes with Swedish Soft

Okay, I've been shopping at Tesco (boo, hiss), because they sell tubs of

Swedish Soft (a cream-cheese type spread made with soya) for under a pound,

and I have come up with some cracking recipes using it, if you're at all

interested (I will also put these up on my website, which is at

http://geocities.com/acorns_rule)

 

Caramelised onion toasty-topper

 

get a medium-large onion, slice reasonably finely

fry in a pan for a couple of minutes, then add a few shakes of soya sauce

and a teaspoon of sugar and a dribble of water (probably about 2-3

tablespoons water), fry on medium-high heat until liquid has evaporated.

 

while waiting for evaporation make two slices of toast, when they are done

spread with Swedish soft (plus a pinch of Swartz barbecue seasoning and a

half teaspoon of vegan pesto mixed into the Soft is also nice if you have

it, but not essential), then share out the onion mix over the top of that.

 

Quiches

 

I made wicked quiches that one of my non-vegan friends couldn't tell from a

normal quiche. I made some little pastry cases (using muffin a 12 muffin

tray), made an ordinary white sauce with one of the little trial size

Provamel unsweetened soya milk cartons, marge, flour, teaspoon of mustard,

a pinch of yeast flakes and a tiny pinch of chilli powder, then added a

small finely chopped onion, cooked for a couple of minutes, then put in

about a third of a tub of Swedish Soft for creaminess, and a block of Paul's

tofu (about a quid's worth - probably about 200grams). Then I heaped the

cases full (you want to make the top domed, as the mix shrinks a bit when

cooked), and cooked on a fairly high heat until the tops were browned and

bubbling). This mixture filled 10 cases when I made it (I filled the other

two in the tray with lentil mixture, which was also nice)

 

These are nice hot, but even better cold, and I think would be really nice

for a party. As it is I just scoffed them, served with mash and peas :o)
