Guest guest Posted August 14, 2003 Report Share Posted August 14, 2003 Carob and Coconut Truffles half a cup of carob powder one and a half cups of desiccated coconut macerated dates Blend the carob powder and coconut in a food processor with enough dates to bind the mixture. blend until sticky enough to roll into balls. Pinch off bits of the mixture, roll into small balls and then roll in some extra desiccated coconut. Braised Leeks & Green Beans 1/2 c.white wine(vegan) 1 tsp. olive oil 5 cs. leeks, well washed 1 c. wild mushrooms, sliced 2 cs. green beans, cut into 1/3 " lengths 1 tsp. orange juice 1/2 tsp. orange peel, grated 1 tbsp. cider vinegar salt & pepper In a large skillet, heat wine & oil over medium high heat. Add leeks & cook, stirring frequently, for 3 minutes. Add mushrooms & beans. Saute until the mushrooms begin to exude moisture, about 5 minutes. Stir in the remaining ingredients & remove from heat.
