Here's a recipe for a Lentil Salad that appeared in The Washington Post, and

I veganized:

 

3 tablespoons olive oil

tempeh bacon (optional)

1 stalk celery, diced

2 medium carrots, peeled and diced

2 cloves garlic, minced

1/4 cup minced onion

1 cup lentils (the recipe calls for French lentils, but you can use the

greenish brown ones)

water

1/2 cup chopped red bell pepper

1/2 cup chopped yellow bell pepper

1 shallot, minced

salt and pepper

1/4 cup olive oil

3 tablespoons red wine vinegar or lemon juice

 

In a saucepan over medium heat, heat the oil. add the tempeh, celery,

carrots, garlic and onion and stir to coat with oil. Reduce heat to low,

cover and cook for five minutes to soften veggies. Add lentils and enough

water to cover the lentils by about one inch. Increase heat to medium-high

and bring to boil. Reduce heat to medium and simmer for 20 to 30 minutes

until the lentils are tender, but not mushy. Drain lentils and combine

mixture with bell peppers, shallot, salt and pepper.

 

Pour lemon juice into small bowl. Add oil in a steady stream, whisking

constantly until emulsified. Pour over lentils and mix to combine.

 

Then serve.

 

 

It's not a bad recipe. I'm thinking of making it again without the tempeh.

It's a good picnic or potluck recipe, as you only need a small amount.

as we are about to enter the month of november, and talk of harvests and

thanxfernuthin...i thought i'd ask

every year me and my *family* (ie. friends) have a big thanxfernuthin

celebration..about 100-200 ppl..goes all nite long...

the food ranges from dead critters to vegan..there are usually about a dozen

vegans there, with maybe twice that veggies...

anyways...

need to come up with a couple dishes..enough to feed 12 ppl er so

usually its me and my partner, we sit around and decide wot we should bring,

etc, then spend all flippin day cooking..heh heh

well..no partner anymore..so have no one to bounce ideas off of...

anyone got a fave recipe?

come on, bacchus knows i've put in enough recipes here over the years!!!!
