Guest guest Posted November 1, 2004 Report Share Posted November 1, 2004 Here's a recipe for a Lentil Salad that appeared in The Washington Post, and I veganized: 3 tablespoons olive oil tempeh bacon (optional) 1 stalk celery, diced 2 medium carrots, peeled and diced 2 cloves garlic, minced 1/4 cup minced onion 1 cup lentils (the recipe calls for French lentils, but you can use the greenish brown ones) water 1/2 cup chopped red bell pepper 1/2 cup chopped yellow bell pepper 1 shallot, minced salt and pepper 1/4 cup olive oil 3 tablespoons red wine vinegar or lemon juice In a saucepan over medium heat, heat the oil. add the tempeh, celery, carrots, garlic and onion and stir to coat with oil. Reduce heat to low, cover and cook for five minutes to soften veggies. Add lentils and enough water to cover the lentils by about one inch. Increase heat to medium-high and bring to boil. Reduce heat to medium and simmer for 20 to 30 minutes until the lentils are tender, but not mushy. Drain lentils and combine mixture with bell peppers, shallot, salt and pepper. Pour lemon juice into small bowl. Add oil in a steady stream, whisking constantly until emulsified. Pour over lentils and mix to combine. Then serve. It's not a bad recipe. I'm thinking of making it again without the tempeh. It's a good picnic or potluck recipe, as you only need a small amount.
