Guest guest Posted October 8, 2005 Report Share Posted October 8, 2005 Ingredients: perfect peanut rice noodles ingredients 8 oz. uncooked rice noodles 1/2 cup creamy peanut butter 1/3 cup unsalted peanuts, chopped 2 Tbs. soy sauce 1 tsp. fresh grated ginger 1/2 tsp. crushed red pepper 1/2 cup water 4 oz. bean sprouts 1 red bell pepper, thinly sliced 2 green onions, sliced 2 Tbs. fresh cilantro, chopped Directions: In a large saucepan, boil about 8 cups of water. Break noodles in half and pull apart slightly; drop into boiling water. Cook uncovered 1 minute and drain. Rinse in cold water; drain and set aside. Mix peanut butter, soy sauce, ginger, and red pepper in same saucepan until smooth. Gradually stir in water until desired consistency. Add noodles, bean sprouts, bell pepper, and onions and toss. Sprinkle with peanuts and cilantro.
