Sprouted grains and whole grains are much lower on the glycemic index.

 

There are three books I'd recommend:

 

Nancy Berkoff's Vegan menu for people with diabetes

PCRM's Healthy Eating for Life to Prevent and Treat Diabetes

Neil Barnard's (also of PCRM)-- Dr. Neal Barnard's Program for

Reversing Diabetes: The Scientifically Proven System for Reversing

Diabetes Without Drugs

I believe that you are ok if you stick to the wholemeal/wholegrain varieties

of these foods. It’s the white refined stuff that the body turns into

sugar.

I had found online the Vegan Food Pyramid. I notice the bottom of the

pyramid or base of the Vegan diet seems to be pasta bread and grains

but as a diabetic I have to watch all those carbs.

Can you have whole grains? Those are complex carbs.

Hi Danielle,

 

Yes, I would have to keep it at the whole grain - complex carbs end,

which is better anyway.

 

I went to the whole grains breads etc when I was diagnosed 4 years ago.

 

Still love my multigrain toast and peanut butter in the morning!
