Instead of the corned beef and cabbage or lamb stew, try a traditional Irish boiled dinner. Well okay, not " traditional " , I made the recipe up myself but it's a nice change. Serve it up with some vegan soda bread. Vegan Boiled Dinner: 3lbs red potatoes, cubed(cut them however you'd like) 1 head green cabbage, chopped 12 oz pkg baby carrots 12 oz container vegan mushroom broth 2 cloves garlic, minced Coarse ground black pepper (to taste) 4 tablespoons Italian seasoning Directions: *Add all ingredients to stock pot *Bring to a boil, reduce heat and leave partially covered *Cook away until veggies are tender ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Vegan Soda Bread: 4 cups flour 1 teaspoon salt 1 teaspoon baking soda 1 teaspoon sugar 2 cups soy milk with 1 tablespoon of vinegar or lemon juice added to sour it Directions: *Preheat oven to 350 degrees *Sift dry ingredients in large bowl, scooping up handfulsof the mixture. allow to drop into bowl to aerate flour *Add enough milk to form soft dough *Working quickly, knead the dough lightly (too much kneading will produce a hard bread) *Form a round loaf about the size of your fist *Place it on a baking sheet which has been lightly flouredand score a cross on top of the loaf with a knife that has been dipped in flour *Immediately bake on the top rack for 30-45 minutes (until the loaf sounds hollow when you rap it with your fist) *Wrap in a tea towel immediately out of the oven so the crust stays a bit softer Quote Link to comment Share on other sites More sharing options...
