SPEAKERS: Paul Shapiro, Senior Director of the Factory Farming Campaign, The Humane Society of the United States Advances for Farm Animals: How and Why We're Winning For decades, the plight of farm animals in the United States has steadily grown worse. Yet the first few years of the 21st Century have seen historic strides against factory farming that few would have imagined just a decade ago. Long-time farm animal campaigner paul Shapiro will discuss some of the most important victories for farm animals and how to make even more progress. As Senior Director of the HSUS's Factory Farming Campaign, Paul has spearheaded numerous successful campaigns to improve the plight of farm animals, most notably several campaigns to persuade retailers to stop selling battery cage eggs. Paul is also the founder and former campaigns director for Compassion Over Killing, where he helped lead campaigns such as the successful effort to end the use of the misleading " Animal Care Certified " logo on battery cage egg cartons nationwide. At Compassion Over Killing, he worked also as a farm animal cruelty investigator, primarily documenting conditions on egg and broiler factory farms, livestock auctions and slaughter plants. Paul has been interviewed by dozens of media outlets, including The New York Times, The Baltimore Sun, The Washington Post, USA Today, Fox New Channel and CNN. He has published dozens of articles about animal welfare in publications ranging from daily newspapers to academic journals. He received a bachelor's degree in peace studies from George Washington University. Cathi DiCocco, Chef/Owner of Cafe Di Cocoa-Food for the Soul and Di Cocoa's Market-Bakery in Bethel, Maine Outfitting Your Vegetarian Kitchen Cathi's passion for food began long ago. She was practically raised in the kitchen of her Dad's Italian restaurant and has been a " foodie " ever since. Graduating from Florida State University, she earned a degree in Vocational Home Economics Education. Rather than return to the classroom, Cathi became a Peace Corps Volunteer in Jamaica and worked with the Ministry of Agriculture as an extension agent. Teaching nutrition in another culture brought awareness to the importance of food education. Her Fearless!! Natural Foods Cooking Classes were well received in the Adult Education community. Cathi traveled throughout New England presenting " Healty Eating " workshops for child care providers. It gave her an opportunity to teach those who influence children's eating habits. She provided food and education for John Robbins' Y.E.S. camps (Youth for Environmental Sanity) in Maine and Maryland. Boston Vegetarian Society invited Cathi along wtih chef/author Didi Emmons and Ken Bergeron to appear as " Iron Chefs in the Raw " at their annual Foodfest. For many years Cathi did cooking demonstrations at the North American Vegetarian Society's Summerfest in Pennsylvania. She was featured as guest chef in five episodes of Delicious TV's-Totally Vegetarian cooking show that continues to be broadcast nationwide on PBS. In her ongoing quest for knowledge and inspiration, Cathi attended The Vegetarian Awakening Conference in Grand Rapids, Michigan in 2006. She was invited back the following year to present a cooking demonstration. The Cancer Project, a nonprofit organization advancing cancer prevention and survival through nutrition education and research, located in Washington, DC enlisted Cathi in 2007 to be a Food for Life Instructor for the State of Maine. " Cafe Di Cocoa-Food for the Soul, " a 28 seat vegetarian restaurant located on Main Street in a Victorian farmouse, opened in Bethel, Maine in 1996. The cafe plays host to the feeding and education of multitudes of people through food tasting workshops, " Gentle Dining " dinner parties, in-house cooking classes, community soup kitchen, and most recently the Summer Cooking Camp for Kids. Plans continue for the cooking school and education center.
