Jo Jo,

 

If he likes pasta, the battle is halfway won! You can use veggie sausage

(Tofurkey makes pretty good vegan sausage), veggie crumbles, veggie meatballs.

You can buy organic pasta sauces--Whole Foods has a line of relatively

inexpensive pasta sauces; the ones I've seen are vegan. Newman's Own also has a

line of pasta sauces, with vegan options.

 

There are vegan cookbooks and websites with recipes for meatless lasagnas.

 

Does he like stir-fry? That's a great way to get your veggies in. Veggie

burgers are also good. Amy's and Gardenburger both make excellent varieties.

 

I'm pretty picky, too, but I've discovered being vegan has expanded my horizons.

Thank you Eliz for your offer of support, that means alot. :-) My main

" trouble " right now is figuring out what to fix for my " totally S.A.D. "

husband. If it were up to him, he would eat Hamburger Helper every night! He

likes pasta dishes, like lasagna, spaghetti, etc. And he is a hard-core meat

eater! Very picky as well. But, I also don't want to " make him " eat Vegan all

of the time, if he doesn't want to, I feel that it is a personal choice, and

when he gets home from work I would like to have him a dinner that he will

enjoy, you know? I have another challenge: I do not have a regular oven right

now. But I do have a stove, a steamer, and a nice crockpot. I would like to

find some tasty Vegan crockpot dishes that we both will enjoy. TTFN ~ Joanie~

LOL!  I have done that already, made him stuff that was all vegan, and he did

not know.  Some stuff though, I am letting slide and adding cow cheese and milk

to, just because I have not gotten into enough recipes yet.  That is definatly a

goal of mine, to start reading and studying vegan cookbooks (I have several) and

picking out things to make.

I will keep you posted.  :-)

i would advise to try and start slowly.

can you make a vgan meal without him knowing? maybe something like a

vegan chili?

a mushroom dish?

and then if he says he likes it, and maybe after a couple of these,

let it go " oh, thats nice, you know this meal and soand so meal were

100% vegan..glad you liked em! "
