Simple Strawberry Mousse

 

 

Cool, sweet, and oh-so-simple, this refreshing dessert won't bog you down after a warming winter meal, but still delivers a little post-supper sugary enjoyment. Visually impressive, this mouth-watering mousse will have your dinner guests thinking that you spent all day perfecting every detail. For simplicity, you can cool the mousse in the same cups in which you'll be serving it. If you happen to have a collection of mix-matched teacups, now's the time to bust them out!

Serves 8

What You Need:1â„2 cup strawberries2 tablespoons fresh lemon juice1/4 cup + 2 tablespoons maple syrup1 tablespoon + 1 teaspoon agar-agar powder3-1â„3 cups soymilk

What You Do:1. For the sauce, in a small saucepan over low heat, add strawberries, mash, and stir for 5 to 6 minutes. Remove from heat and leave to cool. In a food processor, blend mashed strawberries, lemon juice, and maple syrup.

2. In a saucepan, combine agar-agar and soymilk and mix well. When agar-agar is completely dissolved, place over medium heat and bring to a boil, then remove from heat.

3. When soymilk has cooled, pour into cups or molds, and refrigerate until set. Serve mousse in individual dishes, and ladle with strawberry sauce.
