Guest guest Posted April 11, 2009 Report Share Posted April 11, 2009 Traditional Easter celebrations, with a focus on milk chocolate bunnies, pastel-dyed eggs, and roast lamb, aren't very vegan-friendly. But creating a holiday that is more kind to animals can be fun and creative. If you have your heart set on a chocolate bunny, large natural foods markets and food co-ops offer chocolate vegan bunnies and other candies. For a child's Easter basket, you might tuck in a little stuffed bunny or chick, some fun bunny socks, a Pez dispenser with a bunny or chick head, and some lollipops. I saw plastic eggs already filled with Twizzles in the store, too. Homemade chocolate bird's nests look adorable in baskets, too. Melt vegan chocolate chips and gently stir in coconut or crushed shredded wheat type cereal. Let it cool until it can be handled and then shape into nests. Put a few vegan jelly beans in each nest, or vegan chocolate eggs, or a little toy bird. A vegan Easter egg hunt is more fun than the traditional kind. Hide plastic eggs filled with little prizes from the dollar store or with vegan treats like crackerjack or gummy bears. Easter dinner can be anything that is festive and has a nice taste of spring. I love to serve a savory mushroom strudel with tiny roasted potatoes and baby carrots on the side and a salad of tender baby greens. Chilled white wine is nice with this. The strudel can be assembled ahead of time and cooked after guests arrive. Easter is a holiday that celebrates life, rebirth and renewal.
