And a variety of convenience products make vegan sandwiches a snap these days. Look for great-tasting veggie options like Toby's Tofu Paté , Sabra brand Baba Ganouj (an exotic traditional Middle Eastern spread made from roasted eggplant), or meatless sandwich slices are all good choices. Nut butters are a favorite with vegan kids in particular. For a healthy alternative try peanut butter with shredded carrots and apple slices. For something a little different top almond butter with slices of sweet onion and rounds of cucumber. Any nut butter takes on a whole different personality when paired with coleslaw and pickles. Traditional restaurant-style sandwiches can suit vegans with just a few tweaks. Make an old-fashioned club sandwich with tempeh bacon, Tofurky sandwich slices, lettuce, tomato and vegan mayonnaise. Or use slices of baked, marinated tofu with sauerkraut and melted soy cheese on toasted rye bread for a Tofu Reuben. The following two spreads are great for party sandwiches, or anytime you want something a little special. Red Pepper Tofu Spread 1 cup soft tofu 1/3 cup cashews ¼ cup chopped sweet onions ¼ cup oil-cured sun-dried tomatoes 1 tbsp mild miso 1 tbsp Dijon mustard ½ sweet red pepper, coarsely chopped Place all ingredients in a blender and process until smooth. Spread on whole wheat bread and top with slices of fresh tomatoes. Black and Butter Bean Spread with Sun-dried Tomatoes ¼ cup coarsely chopped oil-cured sun-dried tomatoes ¼ cup fresh cilantro leaves 1/8 cup water 2 tablespoons fresh lemon juice 1 tablespoon olive oil 1 clove garlic, minced 1 15-ounce can butter beans (baby limas), drained 1 15-ounc can black beans, drained and rinsed In a food processor, blend all ingredients until smooth.
