Vegan raw almond milk recipe

Although almond milk comes by cheaply in the store, making your own can be a

quick, fun process. By following these easy steps, you can create your very own

non dairy milk beverage. Vegan? On a raw diet? Want only local organic almond

milk? No problem. All of these can be accomplished in a matter of moments.

 

The great thing about making your own milk is that you'll always know how fresh

it is. And once you get into the process of making your own regularly, you'll

really start to notice a difference between boxed and fresh. You can also

control how sweet and strong of flavor you want it.

 

Vegan Raw Almond Milk:

 

2-3 cups raw almonds

Sweetener of your liking (agave, honey, yucan syrup, raw sugar)

4-5 cups filtered water

 

 

Equipment:

 

Blender

Butter grade cheesecloth

 

Thoroughly wash the almonds. Place all of the almonds either in a bowl or in

the blender and cover with the filtered water. Soak the nuts preferably

overnight, but 2 hours should do the trick. This allows for the almond flavor

to seep into the water and also allows for the almond to " sprout " . Although the

almond doesn't really sprout, in raw diets, part of the ideology is to germinate

food to provide the most living thing possible.

 

Once soaked, blend the nuts until smooth. Pour the mixture into a cheesecloth

over a large bowl to trap the milk. See the slide show at the bottom of the

page for more detail. The first blend provides very strong almond milk. If

desired, put the almond fiber (what is left over in the cheesecloth after

draining) back into the blender and recover with filtered water. Blend again

and drain into the cheesecloth for the second time.

 

Blending the almonds a second time provides for a finer almond fiber remnant,

which can then be used for almond cheeses or recipes that use almond pulp. This

method provides 32oz of almond milk, which you can store in a used juice jar.

 

From this point you can add sweetener to taste, or leave plain.
