V in the News Baltimore's Veg PledgeThe Baltimore public school system recently became the first in the country to adopt the Meatless Monday program, and will only serve vegetarian options to its roughly 80,000 students on Mondays. For the effort, PETA is bestowing a Proggy Award on Baltimore for "Most Progressive School District 2009." Kudos! Beef with BeefA front-page story from The New York Times is making headlines around the country with the horrifying account of a young woman who became paralyzed from the waist down after eating a hamburger contaminated with E. coli. The sad story clearly illustrates the dangers of meat production, and brings national attention to the horrors of the meat industry. Human RightsOften, animal activists are perceived as being single-issue focused. A recent report on the conditions of meatpacking plants in Nebraska showed that increased line speeds has led to an increase in workers' injuries on the job. Get Cookin' Soft & Simple Peanut Butter Cookies In case you somehow missed the fact that October is Vegan MoFo (aka, Vegan Month of Food), we're here to help. In honor of the online fun, we chose this month's recipe from Allyson of Manifest:Vegan. We've got cookies on the brain here at the VNHQ since we're at work on our first-ever Holiday Cookie Collection, and these peanut butter cookies look incredible. What You Need:1 cup peanut butter1/2 cup non-hydrogenated margarine, cold1-1/4 cups sugar, divided 1 tablespoon vinegar3 tablespoons water 1 teaspoon vanilla 1/2 teaspoon salt3/4 teaspoon baking powder1-1/2 cups all-purpose flour What You Do:1. Preheat oven to 375 degrees. In a medium bowl, cream 1 cup sugar, peanut butter, and non-hydrogenated margarine together just until mixed. Add vinegar, water, vanilla, salt, and baking powder. Mix in flour until well blended. 2. Roll dough into 1-inch spheres and place about 2 inches apart on ungreased cookie sheet. Using a sugar-coated fork, make an “x†on the top of each cookie, gently pressing down to flatten it as you do so. Bake for 9 to 11 minutes.
