Best Broccoli Soup

 

 

2 cups water

4 cups chopped broccoli

1 cup chopped celery

1/2 cup chopped onion

1 cup chopped carrots

6 Tbsp. oil

6 Tbsp. flour

3 cups McKay chicken-style broth (or alternative)

2 cups milk alternative

2 Tbsp. minced parsley

1/2 tsp. garlic powder

1/2 tsp. salt

 

In a Dutch oven or soup kettle, bring water to boil. Add broccoli,

celery and carrots. Boil 2 - 3 minutes. Drain vegetables and set

aside. In same kettle, saute' onion in oil until tender. Stir in

flour to form a smooth paste. Gradually add the chicken-style broth

and mil,, stirring constantly. Bring to boil and stir 1 minute. Add

vegetables, cover and simmer for 30 - 40 minutes, or until vegetables

are tender.
