Sweet Potato Croquettes

 

1 1/2 pounds of sweet potato

2 Tabs butter melted.

1/3 cup firmly packed light brown sugar

1/2 teas. ground cinnamon

1 tsp. vanilly extract.

8 large masrhmallows

2 cups crushed cornflakes

 

scrub potatoes; cook in boiling water 45 min to 1 hr. or until

tender. Drain well and let stand until cool enough to handle. Peel

and mash; stir in next 4 ingredients. Cover and refrigerate until

chilled.

Form croquettes, shaping scant 1/3 cup sweet potatoe mixture around

each marshmallow. Roll in cornflakes, pressing lightly to form 2-inch

thick patties. Deep fry in batches in hot oil (375f) until browned;

drain..
