Guest guest Posted January 8, 2002 Report Share Posted January 8, 2002 Mouthwatering Mushrooms 1 lb shiitake mushrooms 3 T olive oil 2 garlic cloves, minced 2 T chopped fresh cilantro, oregano or parsley Salt and crushed red pepper flakes Rinse the mushrooms quickly to remove grit. Cut off and discard the tough stems. In a large skillet, heat the oil over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Add the mushrooms and cook, stirring often, until the mushrooms give off their juice and it evaporates, about 10 minutes. Stir in the cilantro and season with salt and pepper flakes. Transfer to a serving dish and serve hot. Cheesy Mushrooms: Transfer the mushrooms to a serving dish. Sprinkle with 1/2 c shredded mozzarella cheese and cover loosely with aluminum foil. Let stand until the cheese melts, about 5 minutes. Sprinkle with the cilantro and serve immediately. Large button mushrooms, cut into quarters, can substitute for the shiitake mushrooms.
