Rice Pilaf

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups brown rice -- see directions

1 cup grated carrot -- see directions

2 stalks celery -- thinly sliced

3 cloves garlic -- chopped

1/2 cup chopped zucchini -- chopped

6 cups water

1/4 cup chicken bouillon

1 tablespoon olive oil

2 stalks green onions -- chopped

 

Saute veggies in oil for a few minutes except for green onion. Add

rice and brown slightly. Add water and seasoning. Cook until rice is

tender. Drain off water if any excess. Garnish with green onion.

 

Yield:

" 8 cups "
