You could use barley in place of the Job's tears, but the flavor of this special grain is much better than that of barley. Because this loaf is time-consuming to make, it isn't an everyday meal. Save it for a special occasion. The cilantro gives this loaf a wonderful flavor. Serves: 8 Work Time: 30 minutes Total Time: 2 hours 1 1/4 cups Job's tears 3 cups water 1 1/4 teaspoons sea salt 2 tablespoons corn oil, or olive oil 1 cup whole-kernel corn 3/4 cup diced onions 2 teaspoons minced garlic 3/4 cup peeled, julienned carrots 4 packed teaspoons chopped cilantro 1 teaspoon chopped fresh basil, or 1/2 teaspoon dried basil 1 1/4 teaspoons sea salt 1/4 teaspoon black pepper 3/4 pound firm or extra firm silken tofu 1/4 cup arrowroot 3 tablespoons agar flakes S Spinach Tofu Pâté Combine the Job's tears, 2 3/4 cups water, and 1/4 teaspoon salt. Cook in a covered pot over medium heat until done (about 30 minutes); they should be soft. Heat the oil in a saucepan. Sauté the corn, onions, garlic, and carrots, along with the seasonings and the remaining 1 teaspoon salt, for about 6 minutes. Remove from heat and allow the vegetables to cool slightly. Add the cooked Job's tears to the vegetable mixture and let stand. Put the tofu, arrowroot, agar flakes, and 1/4 cup of water in a food processor and process until the mixture is smooth. Add this tofu mixture to the vegetables and Job's tears. Make Spinach Tofu Pâté according to directions in the recipe.(See BELOW) Line a large loaf pan with a baking sheet liner and oil the liner. Press a 1/2-inch layer of the Pâté onto all sides of the pan. Lightly press the center full with the vegetable and Job's tears mixture. Top the loaf with the remaining Pâté. Cover with an oiled sheet of baking liner. Bake the loaf in a water bath at 425 degrees F for about 75 minutes. Allow the loaf to cool slightly; then remove it from the pan, unwrap it, and cut it into 1-inch slices. Serve with a sauce of your choice.
