Guest guest Posted January 9, 2002 Report Share Posted January 9, 2002 Mediterranean Style VegetablesRecipe from Better Homes and Garden (adapted)2 cups zucchini sliced2 cups red, yellow, or green sweet peppers sliced2 cups broccoli flowerets1/4 cup chicken-style broth2 garlic, cloves minced1 tablespoon basil or oregano snipped fresh or 1 teaspoon dried basil ororegano, crushed1/4 teaspoon pepper3 tomatoes, medium choppedIn a Dutch oven or large kettle combine zucchini, sweet peppers, broccoli,chicken broth, garlic, basil or oregano, and pepper. Bring to boiling;reduce heat. Simmer, covered, for 6 to 8 minutes or till crisp-tender, stirring occasionally. Stir in tomatoes. Serve these flavorful stewed vegetables hot or at room temperature.
