Spread on toasted French or Italian bread brushed with olive oil. Substitute Spanish piquillo peppers for an interesting alternative to pimentos. Dried basil also works well. Process until just smooth. With the motor running, slowly drizzle in cup olive oil and lemon juice and process until well combined. Transfer the mixture to a bowl and fold in the basil and pepper.
