Rice puddings are enjoyed all over the world. This one goes beyond the usual with spicy-sweet cardamom and aromatic orange flower water. Pass orange-blossom honey for guests to drizzle. While any rice can be used for rice pudding, short-grain rice will produce a creamier and thicker result because of its naturally high starch content.

Instructions

 

Simmer rice in water, covered, for about 15 to 20 minutes, until all the water is absorbed. Add sugar, milk, salt, cardamom pods, and orange zest. Continue simmering, uncovered, over low heat for about 25 to 30 minutes, or until very thick. Stir the pudding frequently as it cooks, especially toward the end, when it is becoming thick. Remove from heat and stir in half and half, vanilla, and orange-flower water. Let cool, stirring occasionally. Remove and discard the cardamom pods. Spoon the pudding into small individual serving dishes. Drizzle with orange-blossom honey.
