Rice is used for many desserts in Southeast Asia; this sweet dish of chewy rice balls in coconut milk has a rich, tropical flavor. Glutinous rice flour is made from high-starch, short-grain rice, and is used to thicken desserts.

Instructions

 

Blend flour and water to form a dough. Shape dough into ¼-inch balls. Simmer water, coconut milk, sugar, and tapioca in a large pot. Add the rice balls when the tapioca is transparent. Add coconut cream when the rice balls are soft but firm; boil for another 5 minutes. Serve hot.
