This Vietnamese tofu dish provides a hearty vegetarian meal, combining tofu and cellophane noodles with peppers and mushrooms. It's accented with lemongrass, soy sauce, and hoisin sauce. Chile peppers add heat.

Instructions

 

Soak lemongrass in warm water for about 1 hour. Meanwhile, heat 1 inch of oil in a wok or skillet. Fry tofu, browning on all sides until crisp and golden brown. Drain on paper towels. Drain lemongrass and mince finely. Fry the noodles in batches, about ¼ at a time. Drop each batch in the hot oil and push down as they expand and puff, until the crackling stops, about 15 to 20 seconds total frying time. Drain on a paper towel and cook remaining noodles. Combine the mushroom liquid, hoisin sauce, soy sauce, tomato paste, and chiles in a bowl; reserve. Remove all but 3 tablespoons frying oil from the wok or skillet. Stir-fry leeks and lemongrass over high heat for about 1 minute. Add the bell peppers and stir-fry for another minute. Add mushrooms and tofu and stir-fry for 1 minute more. Stir in the reserved hoisin sauce mixture and bring to a boil. Allow to thicken, about 2 minutes. Serve vegetables and tofu over fried noodles, sprinkled with pepper.
