Serve this salad with Slow-Roasted Lamb with Pomegranate Glaze followed by Fresh Cheese with Chestnut Honey (see recipes). Preparation hint: Don't omit salting the onions; this step softens the onion flavor and tenderizes the flesh. Cuisine: Mediterranean Prep Time: 5 Minutes Cooking Time: 0 Yield: 8 Servings Source: Paula Wolfert, EG Culinary Council Ingredients - 1 teaspoon(s) Ground sumac 1 teaspoon(s) Coarse salt 2 Red onions, peeled and halved 1/2 cup(s) Chopped parsley Instructions Thinly slice the onions and toss with 1 teaspoon coarse salt. Rub the salt into the strands and let stand 5 minutes. Rinse and drain the onions thoroughly. Mix with the parsley and sumac.
