Guest guest Posted January 9, 2002 Report Share Posted January 9, 2002 Lentil Stew 1/2 cup celery, chopped 1 onion, chopped 1 cup carrots, sliced 2 cups potatoes, diced 1 cup dry lentils 1 tsp. salt 2 Tbsp. parsley 1 quart water 1 can tomatoes (1 lb., 12 oz.), chopped 1/4 tsp. thyme Place all ingredients (except tomatoes) in saucepan. Cook on low heat for about 1 hour.
