Ensalada de Nopal (Cactus Salad)

The prickly cactus—not necessarily the first thing you'd think to put in

your mouth—but a surprising southwestern treat, nonetheless. Cactus has a

mild, grassy flavor and a slightly chewy texture; here it's tossed in a

salad with vibrant flavors and a variety of textures. Serve this simple,

festive salad with any traditional Mexican fare especially Chicken with

Mango and Chipotle Sauce.
