Cactus has a mild, grassy flavor and a slightly chewy texture; here it's tossed in a salad with vibrant flavors and a variety of textures. Serve this simple, festive salad with any traditional Mexican fare especially Chicken with Mango and Chipotle Sauce. Prep Time: 15 Minutes Cooking Time: 0 Yield: 4 Servings -- Ingredients - 3 cup(s) Cactus paddles, sliced, ¼-inch thick 1 Tomato, small dice 1 cup(s) Red onion, chopped fine ¼ cup(s) Cilantro, chopped ¼ tablespoon(s) Lime juice to taste Salt to taste Black pepper, freshly ground -- Instructions Rinse cactus strips thoroughly; pat dry. In a small bowl, combine cactus, tomato, onion, cilantro, and lime juice. Mix well. Season to taste with salt and pepper. Language is an expression of thought.
