Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 Bruschetta What could be called the original garlic bread, traditional bruschetta (pronounced broo-SKETT-ah) is simply slices of crusty bread that are grilled, rubbed with fresh garlic, and drizzled with fruity green olive oil. Other toppings may be added, too, such as Olive Paste and Mascarpone or Fresh Tomato and Basil toppings (see recipes). Cuisine: Italy Prep Time: 20 Minutes Cooking Time: 5 Hours Yield: 12 Bruschette Source: David Rosengarten, Taste: One Palate's Journey Through the World's Greatest Dishes, Random House Ingredients - 1 cup(s) Extra-virgin olive oil to taste Salt (coarse) 1 Country bread, round loaf 6 Garlic cloves, smashed Instructions Prepare a medium-hot charcoal grill. Cut the middle portion of the round loaf into 6 long slices, each about 3/4-inch thick. Cut these slices in half, making 12 half slices that are roughly 3 by 4 inches. When the fire is ready, place the 12 slices over it in a single layer. Cook, turning once, until the outsides of the bread are golden brown (with grill marks, if possible.) This should take about 2 minutes per side; check frequently to make sure the bread isn't burning. When the bread slices are done, rub each one along the edges with smashed garlic cloves (lightly or heavily, depending on your garlic preference.) Place the slices on a large platter in a single layer. Sprinkle each slice with 2 teaspoons of olive oil, breaking the surface of the bread lightly with a spoon to let the oil soak in. Season with salt. Turn the slices over, and repeat the oil-and-salt procedure. Let the slices sit for 10 to 15 minutes. Language is an expression of thought.
