Guest guest Posted January 10, 2002 Report Share Posted January 10, 2002 Linguine with Sweet Red Pepper Sauce Sweet red and yellow peppers roasted until tender and flavorful are used as the basis for this simple pasta sauce tossed with linguine. Any long pasta can be substituted for the linguine, such as fettuccine or spaghetti. Cuisine: Italy Prep Time: 10 Minutes Cooking Time: 20 Minutes Yield: 4 Servings Source: EthnicGrocer >printable version Ingredients - 1 pound(s) Linguine 2 tablespoon(s) Extra-virgin olive oil 1 Onion, medium, coarsely chopped 3 teaspoon(s) Garlic, coarsely chopped 1 1/4 cup(s) Roasted red peppers 1 1/4 cup(s) Roasted yellow peppers 1/2 cup(s) Water to taste Salt 1/4 cup(s) Heavy cream, warmed (1/2 cp of silk tofu and 1/2 cp of soy milk blend to make thickness of heavy cream) to taste Black pepper, freshly ground Instructions Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain noodles, dress with a little olive oil, and reserve in a warmed serving bowl. Heat oil, and onion. Sauté until translucent. Add garlic and continue sautéing until fragrant. Add the peppers, 1/2 cup of water, and salt and pepper to taste. Cook over very low heat until peppers begin to fall apart. Pass the mixture through a sieve or the fine disk of a food mill. Add the warmed cream and stir. Keep the sauce warm. Toss hot sauce with pasta. If desired, toss in a sauté pan to warm; serve at once. Language is an expression of thought.
