Arrabbiata, Italian for angry, refers to the spiciness of the red sauce, which contains red-pepper flakes. Parmesan cheese is added at the end in the classic risotto style. Serve arrabbiata rice with grilled meat, fish, or poultry. Preparation hint: Cooking rice like pasta in lots of boiling water is considered foolproof by many chefs. Just check doneness after 10 minutes; don't overcook.
