Cuisine: India Prep Time: 15 Minutes Cooking Time: 5 Minutes Yield: 4 Servings Source: EthnicGrocer >printable version -- Ingredients 1 teaspoon(s) Cumin seeds 1 Onion, diced 3/4 cup(s) Mushrooms, diced 1 teaspoon(s) Turmeric 1 teaspoon(s) Coriander, ground 1 teaspoon(s) Chili powder 2 cup(s) Basmati rice, cooked 2 tablespoon(s) Cilantro, fresh, chopped to taste Sea salt 4 Tomatoes, large and firm 1 tablespoon(s) Pure Ghee -- Instructions Heat ghee in a skillet, add cumin seeds and cook until they pop. Add onions and sauté until translucent. Add mushrooms, turmeric, coriander, and chili powder, and sauté for 5 minutes. Add rice, cilantro, and salt; mix, and remove from heat. Prepare the tomatoes by cutting off their tops and scooping out the flesh.
