Aromatic coriander and cumin add a pleasing nutty depth, while crisp cucumbers and mint refresh and invigorate the palate. Serve this mixed raita alongside all full-flavored Indian dishes accompanied by raw vegetable crudités as a refreshing foil. Click " View all recipe products " to see all recipe products. 1 teaspoon(s) Coriander seeds 2 1/2 cup(s) Yogurt to taste Fine Sea Salt 1/2 Cucumber, chopped 1 teaspoon(s) Green chile, finely chopped 1 teaspoon(s) Mint, chopped 1 Small onion, chopped 1 Small tomato, chopped 1 pinch(es) Chili powder 1 slice(s) Cumin seeds -- Instructions Heat skillet until hot. Toast cumin, coriander, and peppercorns until dark and aromatic. Pound in a mortar and pestle or process in a spice grinder or mini food processor; reserve. Whisk yogurt and salt in a bowl. Add cucumber, chile, mint, onion, and tomato and mix well. Pour into a serving dish and sprinkle with chili powder and the reserved pounded spices. Chill for at least 30 minutes before serving.
