Festive Saffron Rice

This classic Indian rice dish, made from aromatic basmati rice, is infused

with the aroma of saffron and dotted with raisins and almonds. Serve with a

rich meat or vegetarian curry. Ghee is clarified butter that is further

cooked, imparting a nutty taste. It is commonly used for sautéing throughout

India; its high smoke point allows for a buttery taste without burning.

Ingredients

 

 

 

1/2 cup(s) Almonds, blanched and sliced

1/2 cup(s) Golden raisins

1/4 teaspoon(s) Saffron threads

1/4 cup(s) Warm Vanilla Soymilk

2 cup(s) Water

to taste Sea salt

2 teaspoon(s) Sugar

1 tablespoon(s) Pure Ghee

Instructions

 

Melt ghee in small frying pan, add nuts and raisins and sauté over low heat

for a few minutes. Reserve.

Combine saffron with warm milk and let it soak for 10 minutes.

Bring the water and salt to a boil. Wash and drain rice well, then add to

boiling water. Cover and reduce heat, cook for 7 minutes.

Add saffron and milk to rice, which should still have some water in it.

Add sugar and stir gently. Continue to cook rice, covered, for 5 more

minutes.

Remove from heat and add the reserved nuts and raisins, serve hot.
