For a final touch, top with gently whipped cream or whipped mascarpone cheese and sprinkle with nutmeg. Leaving the pear stems intact makes for an attractive presentation. Preparation time does not include 3-hour soaking time. Cuisine: French Prep Time: 25 Minutes Cooking Time: 25 Minutes Yield: 6 Pears Source: EthnicGrocer -- Ingredients 2 Cloves 1 Cinnamon stick 6 Firm, ripe pears 3 cup(s) Dry red wine(wine cooks off and does not leave an alcohol taste) Cranberry or Grape Juice works but not the same affect 3/4 cup(s) Sugar 1 Zest of lemon 1 Vanilla bean -- Instructions Peel the pears carefully, leaving stems intact. Trim the bottoms to make a stable base. Combine wine, sugar, and zest in a saucepan large enough to fit the pears. Break the cinnamon stick, and scrape the vanilla bean into the saucepan. Tie cloves and peppercorns in a cheesecloth and add to the saucepan. Bring wine to a boil. Reduce heat and simmer, uncovered, until sugar is dissolved. Add pears, cover, and poach over low heat, turning to coat, for 20 minutes. (Liquid should cover pears.) Remove from heat and cool pears in the syrup for at least 3 hours. Strain syrup. In a saucepan, simmer syrup to thicken. Serve pears with sauce. Language is an expression of thought.
