Custard With Marsala 11 eggs 4 Tbsp. sugar 1 cup Marsala wine Combine 10 egg yolks, one whole egg and 4 Tbsp. sugars in the top of adouble boiler above simmering water. If you do not have a double boilerthen use a heatproof glass bowl set down in a shallow pan of simmeringwater. Beat the egg mixture with a whisk or beater until it is fluffy.Gradually add the Marsala wine and continue beating, for at least 10minutes, until the mixture thickens and can be scooped with a spoon. Spoonthe custard into individual dessert bowls or large glasses and serve warm.
