Guest guest Posted January 12, 2002 Report Share Posted January 12, 2002 Snow Peas & Wild Mushrooms With Ginger 1/2-teaspoon canola oil, (or sesame oil)3 cups mushrooms, Mixed (shiitake, chanterelles, oyster, etc.), sliced2 Tablespoons ginger root, peeled and sliced into 1/2-inch matchsticks1/2 teaspoon ginger powder1/2 teaspoon cardamom, ground1-teaspoon cornstarch2 teaspoons rice vinegar1/2-teaspoon soy sauce, low-sodium3 cups snow peas, fresh or frozen15 ounces, canned baby cornHeat a sauté pan over medium-high heat and add oil. Sauté mushrooms,ginger root, ginger powder, and cardamom for 2 minutes, stirringoccasionally. Dissolve cornstarch in vinegar and soy sauce. Addcornstarch mixture, snow peas and baby corn to sauté.
